It started with a documentary.
Winter 2021. We were deep in one of those late-night streaming spirals when we landed on The Birth of Sake — a film about the Yoshida Brewery in Japan, where a small team of brewers has been making sake by hand for generations using a single, remarkable organism: Aspergillus oryzae, the mold at the heart of koji fermentation.
We didn't sleep much that night. By morning, we were already asking the same question: what would koji do to a pepper?
What followed was almost two years of experimentation, a lot of patience, and eventually, a batch that genuinely stopped us in our tracks. That's where #KojiHachi came from. And in this post, we want to explain the science behind it — what koji actually is, how it works, how it differs from the lacto-fermentation we already know and love, and what it produces in a bottle of hot sauce that nothing else can replicate.
What Is Koji? (And What Is Aspergillus oryzae?)
Koji isn't new. It's been central to Japanese, Korean, and Chinese food culture for thousands of years. If you've eaten miso, soy sauce, sake, mirin, or rice vinegar, you've tasted its work. The organism responsible for all of it is Aspergillus oryzae — a filamentous mold that, when cultivated on a grain or legume substrate under controlled humidity and temperature, produces an extraordinary array of enzymes.
The most important of these are:
- Amylases, which break down starches into sugars
- Proteases, which break down proteins into amino acids
- Lipases, which break down fats into fatty acids
That enzymatic activity is the engine of koji fermentation. When A. oryzae goes to work on a substrate — whether that's rice, barley, soybeans, or in our case, peppers — it systematically dismantles complex molecules into their simpler, more flavorful components. Starches become sugars. Proteins become free amino acids. And free amino acids, particularly glutamate, are the biochemical foundation of umami.
This is not metaphor. When you taste something deeply savory and complex — a long-aged cheese, a bowl of ramen, a spoonful of miso — you're tasting the chemical signature of enzymatic breakdown. Koji is one of the oldest and most reliable ways to create that flavor from scratch.

How Koji Fermentation Differs From Lacto-Fermentation
We've been making lacto-fermented hot sauces since the beginning. It's the foundation of what we do. So when we say koji is different, we're not being dismissive of the process we built this brand on — we're describing a genuinely distinct biological pathway that leads to a genuinely different flavor outcome.
In lacto-fermentation, the primary actors are Lactobacillus bacteria — naturally present on pepper skins and in the environment — that consume sugars in an anaerobic brine and produce lactic acid. The result is a pH drop that preserves the peppers and produces that clean, bright tartness you know from traditional ferments: sauerkraut, kimchi, classic lacto hot sauce. The flavor profile is aromatic, lively, and fresh, with a characteristic acidity that makes lacto sauces excellent as finishing condiments.
Koji fermentation works differently at a fundamental level. Aspergillus oryzae is a mold, not a bacterium, and its primary contribution isn't acidification — it's enzymatic transformation. Rather than changing the pH environment, koji breaks down the structural molecules in the pepper itself, converting proteins into amino acids and starches into sugars before any further microbial activity occurs. The result is a flavor base that is deeply savory, dense, and complex — with a light natural sweetness that comes directly from enzymatic starch conversion, not from added sugar.
One other key difference: time. Lacto fermentation typically runs anywhere from two to six weeks depending on the recipe and desired profile. Koji fermentation — done properly, the way we do it — takes months at minimum. We ferment our #KojiHachi sauces for at least eight months. When we can, we push to two years or more. That extended timeline isn't a constraint — it's where the depth comes from.
What Koji Does to Pepper Flavor
Here's the part that genuinely surprised us when we cracked open that first batch.
When Aspergillus oryzae works through a pepper mash over months, the enzymatic activity doesn't just add umami — it fundamentally transforms the pepper's flavor identity. The aromatic volatiles that define a fresh jalapeño or habanero are still there, but they're embedded in a much richer, more layered base. The heat is present, but it arrives differently: rounder, slower to build, with more complexity in the finish.
The proteolytic activity — the breakdown of proteins into free amino acids — is responsible for the dense savoriness that comes through immediately on the palate. Glutamate, one of the primary amino acids released in this process, is the same compound that makes aged Parmesan and long-simmered stocks taste the way they do. In a hot sauce, that same compound creates a depth of flavor that no quick-process sauce can approach.
The amylase activity — starch-to-sugar conversion — adds a subtle natural sweetness to the ferment that acts as a counterpoint to the heat. It's not sweet in the way that fruit-based sauces are sweet; it's more like the background sweetness in a well-made sake. Present, balanced, and functional: it rounds out the heat rather than competing with it.
One thing that genuinely surprised us: each of our four pepper varieties — jalapeño, habanero, Fresno, and serrano — tastes radically different after koji fermentation than it does in any other context. The enzymatic process seems to excavate flavor compounds that aren't accessible any other way. A koji-fermented habanero tastes more like itself and also like nothing you've tasted before. That's not hyperbole — it's just what happens when you give a mold eight months to work.

Our Process: How We Developed #KojiHachi
We started where most people start with koji: the documentary rabbit hole, then a trip to an Asian grocery market in St. Paul, Minnesota, where we picked up Thai chilis and good koji spores. That winter of 2021–2022, we ran our first experiments — testing both koji rice and koji barley as the substrate with those Thai chilis, learning how the mold behaved, how to manage temperature and humidity, what the ferment smelled like at two weeks vs. eight weeks vs. six months.
Because of koji's long fermentation timeline, we had to wait until the 2022 pepper season to run the real test — using the chili varieties our farmers in the Red River Valley grow best. When we opened those first jars of jalapeño, habanero, Fresno, and serrano fermented with koji, we knew immediately we were making something new.
The name is a marriage of two words: koji, for the organism driving the fermentation, and hachi — the Japanese word for eight. Eight months is our floor. It's not a guideline or a target; it's the minimum we'll ever release a #KojiHachi sauce. That's the point at which the enzymatic activity has had enough time to work deeply through the mash and the flavor density reaches a level that's genuinely unlike anything we've made before. We named the line after that commitment because the number isn't incidental — it's the whole point.
When we have the capacity to extend fermentation to two years or more, we do. Those batches are something else entirely.

What You'll Taste: Koji vs. Lacto Side by Side
We make both. We love both. But they deliver very different experiences.
Our lacto-fermented sauces are bright and aromatic — lighter in body, with a clean tartness from the lactic acid, and pepper-forward flavor that hits quickly. They're excellent for adding a fresh, acidic lift to food: finishing a taco, brightening a grain bowl, cutting through rich dishes.
Our #KojiHachi sauces are something else. They're dense with flavor — the kind of density that makes you pause on the first taste and take stock of what's actually happening in your mouth. The umami is immediate and prominent. The sweetness is subtle but present, acting as a foil to the heat. The heat itself is real — this is still a hot sauce — but it integrates with the other flavor components instead of arriving on its own.
If our lacto sauces are the aromatic finishing touch, our koji sauces are the foundation layer. They work beautifully into cooking — stirred into a braise, mixed into a marinade, added to a dipping sauce, used anywhere you'd want to build depth. But they also hold up on their own as a condiment, because the flavor density means a small amount carries a long way.
